✨ This concert features wine pairings by our resident wine expert, Ryan Lim. He has selected two exceptional Rieslings to accompany the evening:
🕰️ First half: Dennis Wolf – Riesling Laumersheimer Kirschgarten 2020
🕰️ Second half: Domaine Bohn – Riesling Schieferberg “Le Romarin”
Dennis' Riesling is pure and sharply mineral, with a salty edge that beautifully reflects the chalky soils it comes from. Harvested late and slowly pressed using a traditional basket press, the wine pays homage to the diverse traditions Dennis absorbed from iconic craftsmen like Didier Dagueneau in the Loire and Jean-Louis Chave in the Northern Rhône. The result is an unconventional, modern take on German Riesling—stripped down to its essentials.
In Alsatian, Schieferberg means “mountain of schist”—an unusual terroir for the region. Far from the typical fruit-forward Alsatian Riesling, Le Romarin shows remarkable tension and depth. Aged for three years with skin contact in amphora and refreshed yearly with the next harvest, it is a multi-vintage cuvée (2017–2021) that reflects Domaine Bohn’s artistic curiosity and experimental spirit.

✨ Ce concert propose des accords mets-vins sélectionnés par notre expert en vin résident, Ryan Lim. Il a choisi deux Rieslings d’exception pour accompagner la soirée :
🕰️ Première partie : Dennis Wolf – Riesling Laumersheimer Kirschgarten 2020
🕰️ Deuxième partie : Domaine Bohn – Riesling Schieferberg « Le Romarin »
Le Riesling de Dennis est pur, avec une minéralité tranchante et une pointe saline, véritable reflet des sols calcaires dont il est issu. Vendangé tardivement et lentement pressé dans un ancien pressoir à panier, ce vin rend hommage aux traditions que Dennis a apprises auprès de vignerons emblématiques comme Didier Dagueneau dans la Loire et Jean-Louis Chave dans le nord de la Vallée du Rhône. Le résultat : une interprétation moderne et singulière du Riesling allemand, réduite à l’essentiel.
En alsacien, Schieferberg signifie « montagne de schiste » — un terroir rare dans la région. Loin du Riesling alsacien classique axé sur les arômes de fruits primaires, Le Romarin se distingue par sa tension et sa profondeur remarquables. Élevé trois ans avec macération pelliculaire en amphore, complété chaque année par la vendange suivante, ce vin multi-millésimé (2017–2021) témoigne de la curiosité sans limites et de l’esprit novateur du Domaine Bohn.
